Course Topic: Wellness & Lifestyle
Description: Participants will learn to cook a
one-pan dish accompanied by an easy, fresh salad
with homemade vinaigrette. Marinated chicken,
seared beautifully, will flavor the rice as it cooks.
The chef will discuss using other ingredients
besides salt to enhance the flavor and introduce
gluten-free options for this dish. Nutritionist
Nora Jensen will accompany Chef Kyle Mason
and provide information on nutritional value.
Participants will be able to enjoy the meal after
the cooking demonstration.
Instructor: Chef Kyle Mason brings his culinary
expertise to Messiah Lifeways, focusing on
food that nourishes not just the body, but the
heart and soul. And now—he’s inviting you into
the kitchen.
Wednesday, March 25

Course Topic: Culture, Arts, & Music
Description: The class will be livestreamed in
the Enrichment Center, and the instructor will
join the audience virtually. Norman Rockwell’s
illustrations for the Saturday Evening Post
spanned two world wars and helped create
an image of idealized small-town life that is
heartwarming, family based, and uncomplicated.
We will focus on these iconic images as well
as his more challenging illustrations for Look
magazine, such as the “Problem That We All
Live With.”
Instructor: Kathryn McClintock has a bachelor’s
degree in English and Art History from UC
Berkeley and a master’s degree in Art History
from Penn State. She taught the Introduction to
Art course through PSU Outreach for more than
20 years before retiring in 2018.
Nora Jensen, MHSc, RDN, LDN, is the Director
of Clinical Nutrition and Wellness with Culinesse.
She holds a BS in Nutrition and a master’s in
Health Science and Nutrition from Cedar Crest
College, where she is also an adjunct professor.
Nora has been working in clinical and food
service management roles in senior living for
more than a decade.

serve delicious donuts from her business, Jenbel
Haitian Bakery, and speak about her experience
as a refugee and entrepreneur in the United
States. Stay afterward for a short service project,
packing feminine products for Catholic Charities
Empowering Women for Success Program.
